Jikaseimen Enami

A pioneer that popularized rich pork-and-seafood tsukemen (dipping noodles) across Fukushima, Jikaseimen Enami remains an undisputed titan of the local ramen scene. Renowned for its extraordinary dedication to scratch-made noodle craft and innovative culinary approach, Enami draws passionate ramen enthusiasts every single day.

By blending select Japanese domestic wheat flours in a proprietary golden ratio, Enami produces noodles with an unforgettable chewy bite and deep natural sweetness that leave a lasting impression.

Noodle-Centric Brilliance: Extra-Thick Homemade Noodles Bursting with Wheat Aroma

The undeniable crown jewel of Enami is its masterfully crafted homemade noodles ( jikaseimen ).

For the flagship “Osakana to Oniku no Tsukemen” (Fish & Meat Tsukemen), Enami serves extra-thick, udon-esque straight craft noodles. Chilled and tightened in icy water, the noodles release an explosive burst of wheat sweetness and firm, satisfying elasticity the moment you chew into them.

Flavorful enough to be enjoyed completely plain without sauce, each bite radiates the rustic, comforting fragrance of freshly kneaded Japanese wheat flour.

Deep Multi-Layered Umami: Rich Pork & Seafood Broth Packed with Tender Chashu

Meeting this formidable noodle is a luxuriously rich dipping soup that lives up to its name—a lavish celebration of both land and sea.

Simmered for countless hours to extract pure collagen and marrow from pork and chicken bones, the base broth is heavily blended with dried sardines ( niboshi ), bonito flakes, and mackerel flakes. Topped with fragrant fish powder and subtle citrus yuzu zest for balance, the thick broth clings generously to every strand of noodle.

Submerged within the soup are bountiful tender cubes of braised pork belly chashu that melt delightfully, alongside crunchy oversized menma bamboo shoots that complete an intensely satisfying bowl.
