“Kaminari Tokyo Honmaruten,” spectacularly located inside the ticket gates of Tokyo Station (Gransta Tokyo 1F), is a massively popular Jiro-inspired ramen shop produced by the illustrious “Chuka Soba Tomita” from Matsudo, Chiba.
The soup is an incredibly rich, emulsified broth made by boiling domestic pork back fat and bones for over 20 hours, seasoned with a sharp, slightly sweet specialty soy sauce. It is paired with extremely thick, wavy noodles, a mountain of vegetables (bean sprouts and cabbage), and a gigantic, tender block of braised pork (chashu).
Unbelievably, it opens at 8:00 AM, drawing crowds who crave a heavy, garlic-laden bowl for breakfast—a phenomenon affectionately known as “Asa-Kaminari” (Morning Kaminari).
