The soup is light yet rich, made with a broth of “Takumi Oyama-dori” and “Soshu Kohaku-dori” chickens, chicken bones, and momiji (chicken feet), combined with kelp and six types of vegetables. In addition to chicken, the soup uses sea bream bones to create a complex and well-balanced umami flavor. The owner, who has experience in various restaurants including Italian, has created this special ramen through self-study.
