This is a popular Jiro-inspired ramen restaurant, selected as one of the Tabelog Top 5000. The soup is an emulsified type with a rich pork flavor, but it’s lighter and less soy-sauce-heavy than it looks. The noodles are custom-made by “Kokoro no Aji Shokuhin,” the same producer as the famous “Tomita” ramen, and are characterized by their fragrant wheat aroma and chewy texture. The chashu (braised pork) is thick, with tender, sweet fat and melt-in-your-mouth lean meat, earning it the nickname “God’s Pork.” Located at 1-22-6 Higashi-Jujo, Kita-ku, Tokyo.
