Opened in December 2016, “Nishi-chan” has a retro atmosphere reminiscent of a traditional ramen shop. The basic menu’s soy sauce ramen is offered at a “one-coin” price of 500 yen, allowing you to enjoy an orthodox ramen. The soup is primarily based on seafood such as niboshi (dried sardines) and fushi (dried bonito), with chicken and pork adding depth. The noodles are high-hydration, flat, medium-thin, curly noodles from Mikawaya Seimen, known for their springy texture.
